Coffee is classified based on its qualities. Quality is a set of features of intrinsic components that determine the degree of acceptance of coffee within a comparable scale established by the consumer market. To determine quality, each of components that affect final classification must be assessed separately through physical processes or be analyzed with the senses. In this way, the color, size and shape of beans are determined and, in the end, the aroma and flavor of the coffee drink is analyzed through cup tasting.
